The short answer
Some frying pans can go in the oven, but not all of them. The pan body is rarely the problem — it is the handle, the lid knob and the non-stick coating that set the limit.
A fully metal pan with a riveted metal handle is usually oven safe. Plastic or wooden handles, and glass lids, usually are not. Always check the manufacturer's stated maximum temperature for your specific pan.

Can Frying Pans Go in the Oven?
Some frying pans can go in the oven and some cannot. A pan made entirely of metal — a stainless steel, cast iron or carbon steel body with a riveted metal handle — is usually oven safe. A pan with a plastic, silicone or wooden handle usually is not, because that handle will fail long before the metal does.
This catches people out because the pan body is almost never the weak point. Steel and cast iron shrug off ordinary oven temperatures. The parts that give way are the ones bolted on for comfort.
The four things that actually set the limit
1. The handle. This is the single most common reason a frying pan is not oven safe. Plastic and composite handles can soften, warp or scorch well below the temperature the pan body tolerates. Wooden handles dry out, crack and can char. Silicone copes with more heat than plastic but still has a lower ceiling than metal. Solid metal handles are the ones you can trust.
2. The lid and its knob. A glass lid is not the same as a glass oven dish. Lids are often fitted with a plastic or phenolic knob, and even a tempered glass lid has a stated maximum that is lower than the pan it sits on. If you are moving a pan to the oven, the simplest safe move is to take the lid off, or use a plain metal lid or foil instead.
3. The non-stick coating. Any non-stick surface, ceramic or otherwise, has a maximum temperature set by the manufacturer, and it is normally below what the bare metal would take. Coatings degrade when they are pushed past it, and an empty pan left to dry-heat gets there fastest. If you are baking in a coated pan, keep something in it.
4. Rivets, seals and trims. Some pans use bonded or glued handles rather than rivets, and some have rubber or plastic trim around the rim. These are oven-limiting in the same way a plastic handle is.
Because these limits are set per product and not by any universal standard, there is no single temperature that applies to all pans. Anyone who quotes you one number for “frying pans” is guessing. Check yours.
How to Check if Your Frying Pan Is Oven Safe
Four checks, in order. If any one of them fails, keep the pan on the hob.
- Look at the handle. Is it solid metal, all the way to where it meets the pan? If it is plastic, wood or silicone, stop here.
- Take the lid off. Unless the lid is plain metal and the manufacturer says otherwise, leave it out of the oven. Glass lids and plastic knobs are a separate limit from the pan.
- Check the coating. If the pan is non-stick, find the maker's stated maximum oven temperature. Do not assume it matches the metal.
- Read the base. Most oven-safe pans are stamped on the underside with an oven symbol and a temperature, or state it in the supplied care information. No marking and no manual means treat it as hob only.

Oven Pan and Tray Materials Compared
Once you are past the oven-safety question, material is what decides how a pan actually cooks. Here is what each one is genuinely good and bad at.
Aluminium
Aluminium conducts heat faster and more evenly than any other common bakeware material, which is why most professional baking sheets are made from it. It is light and inexpensive. The trade-offs: bare aluminium reacts with acidic ingredients such as tomato and citrus, which can leave a metallic taste and dull the surface, and thin aluminium trays warp in a hot oven. Anodised or coated aluminium avoids the reactivity, and a heavier gauge avoids the warping.
Stainless steel
Durable, non-reactive and easy to live with — it will not rust, stain or pick up flavours, and it is usually dishwasher safe. On its own, though, stainless conducts heat less evenly than aluminium, which is why good stainless pans are built with an aluminium or multi-ply base to spread the heat. Excellent for roasting tins and long-life baking sheets.
Cast iron
The best heat retention of the lot. Cast iron takes a while to come up to temperature and then holds it, which is exactly what you want for roasting, searing and anything that goes from hob to oven in one piece. It is genuinely oven safe at high temperatures. The costs are weight, the need to keep it seasoned, and the fact that bare cast iron reacts with acidic food. It should not go in the dishwasher.
Carbon steel
Behaves like a lighter, more responsive cast iron. It heats quickly, takes high heat, moves from hob to oven, and builds a seasoned non-stick surface over time. Like cast iron it needs looking after and will rust if left wet.
Ceramic and stoneware
Heats gently and evenly, holds heat well once hot, is completely non-reactive, and looks good enough to serve from — which is why casserole dishes are usually ceramic or stoneware. Heavy, breakable, and vulnerable to thermal shock: avoid moving it straight from fridge to hot oven. Generally oven only unless the maker states otherwise.
Glass
Non-reactive, easy to clean, and useful because you can see how the base and sides are browning. Glass bakeware has a manufacturer-stated maximum temperature and is the material most easily damaged by sudden temperature changes. Oven only.
Non-stick coatings
A coating is about release and cleaning, not about heat performance — the metal underneath still does the cooking. Every non-stick surface has a maximum temperature set by its maker, usually lower than the bare metal, and it will wear out faster than the pan does. So what is the best material for oven trays?
For everyday baking trays and sheet pans, heavy-gauge aluminium or aluminised steel is the best all-round answer: fast, even heat, and enough thickness to resist buckling. Choose stainless steel if you want a non-reactive tray that will outlive everything else in the drawer, and cast iron when heat retention matters more than weight. What Each Type of Oven Pan Is For
Baking trays and sheet pans
Flat, with either a shallow rim or no rim at all. Used for biscuits, scones, traybakes, roasting vegetables and anything that wants dry heat and air circulation. The rimless kind lets you slide things off; the rimmed kind stops juices running into the oven. This is the most-used oven pan in most kitchens.
Cake tins
Deeper and shaped for the job — round for sponges, square for brownies, loaf tins for bread. Depth matters here: it controls how the batter rises and how the edges set relative to the centre, which is why recipes specify a tin size rather than leaving it to you.
Roasting tins
Deep, sturdy, usually with handles, and often supplied with a rack. Built for joints of meat and whole birds, where you need to catch a lot of fat and juice and want the heat to reach underneath. Sturdiness is the point — a flimsy roasting tin buckles under a heavy joint.
Casserole and gratin dishes
Ceramic, stoneware or glass, for slow, gentle, moist cooking: casseroles, bakes, lasagne, gratins. They hold heat so the dish stays hot at the table, and they are attractive enough to serve from. Oven only, as a rule.
Pizza pans and stones
Thin metal pans and ceramic or cordierite stones both exist to do the same job: get a lot of heat into the base of the dough quickly so it crisps rather than steams. Stones need a long preheat; metal pans do not.
Oven-safe frying pans
The one that saves the most washing up. An all-metal frying pan lets you start something on the hob — browning a chicken thigh, softening onions, getting colour on a steak — and then move the whole pan into the oven to finish. No transferring, no second dish, and you keep every bit of fond in the pan. If you only add one oven pan to your kitchen, this is the one that changes how you cook.
