Is it the right knife?
The Chikashi chef knife. Damascus for every day.
An 8" blade with a VG10 core and 67 layers of Damascus, sharpened to 8–12° per side, with an abalone handle. Our best-selling Chikashi knife — the one that handles almost every job.
- 8" (20.3cm) blade for slicing, dicing and chopping
- VG10 core, 67-layer Damascus, 8–12° edge
- Abalone handle, balanced for fatigue-free cutting
Best for
Choose the chef knife if you want one knife for almost everything — meat, fish, veg and herbs. The curved edge rocks through chopping, and the 8" length handles bigger jobs.
The steel
Why VG10 Damascus?
Every Chikashi blade has a VG10 Japanese steel core wrapped in 67 layers of Damascus, so it takes a keen edge, holds it, and looks like nothing else in your kitchen.
-
67
Layers
Damascus steel folded around the core for strength, stain resistance and the feather pattern.
-
VG10
Japanese steel core
A high-carbon stainless steel prized for taking a fine edge and holding it.
-
8–12°
Edge per side
A finer edge than most Western knives, so it glides through food with less pressure.
-
Abalone
Handle
Shimmering abalone set in an ergonomic handle, balanced for fatigue-free cutting.

Good to know
Which Chikashi knife should I start with?
Most people start with the 8" chef knife: it handles meat, fish and veg. Prefer something lighter and more compact? Choose the 7" santoku. Kitting out a whole kitchen? The full set with six knives and the sharpening steel works out cheaper than buying them one by one.
Can it go in the dishwasher?
No. Hand wash and dry it straight after use to keep the edge sharp and the abalone handle looking its best.
How long does delivery take?
Shipping is free worldwide on every order. Most orders arrive within 7–10 business days; remote areas can take a little longer.
What if it’s not right for me?
You have 180 days to return it, as long as it's complete, undamaged and in its original packaging.
Is there a warranty?
Yes. Every Chikashi knife is covered by our lifetime warranty.
